Shrimp Ceviche



1/4 red onion
3 stalks of green onion
4 stalks of celery
Half of a jalapeño (less or more depends on your preference)
1/4 red pepper
2 cups of shrimp
Sea salt
About 6 lemons


-Boil about 3 cups of water
-When water reaches boiling point, add shrimp and lower to medium/low heat and cook for 5 minutes
-While shrimp is cooking, chop up the veggies
-place chopped veggies in a large bowl
-Squeeze half of lemons over the veggies
-Add shrimp to the bowl and squeeze the other half over the shrimp
-Mix and add sea salt

*This is my version of ceviche because normally you would not cook the shrimp, it would get cooked by the lemon juice and you would have to let it sit for half an hour or so. However, I don’t like consuming raw fish/shellfish too much. Feel free to add boiled sweet potato.


Healthy Pasta Sauce- Product Review




This was my first time purchasing this product. I like to make zucchini pasta and sometimes buying sauce is more convenient than making it yourself. However, most of the sauces sold at stores contain sugar & high amounts of sodium. I went to Publix last week and found this sauce which was around 4 dollars. No sugar or salt added, and low in calories. This sauce doesn’t have too much flavor, but you can add in sea salt & other spices. This way, you can control what is in your food. I typically add cayenne pepper and sea salt.


Cauliflower chocolate pudding


This is a recipe I adapted from “Jazzy Things.” I saw her post on Instagram and had to try it out. Her recipe included almond milk, cocoa powder, & coconut stevia. I used about 1/4 cup of almond milk, 2 tablespoons of cocoa powder, 1 teaspoon of vanilla extract, 2-3 teaspoons of chia seeds, & 20 drops of normal stevia. Not only was it delicious (you can’t taste the cauliflower at all), it is a great way to incorporate veggies into your diet.

-Boil 2 cups of cauliflower
-Place in blender/food processor with all ingredients until smooth/creamy


Spicy Cauliflower Mash W/ Turkey Bacon


This is a great alternative to mashed potatoes.


4 cups of cauliflower
1/4 cup of almond milk
1 tablespoon of Trader Joes Taco seasoning mix
1 teaspoon of cayenne pepper seasoning
2 strips of Trader Joes turkey bacon (99% fat free)


-Boil cauliflower
-While cauliflower is cooking, cook bacon
-Place cooked cauliflower in blender/food processor with the milk and seasonings
-Serve and sprinkle cut bacon pieces on top
