Shrimp Ceviche



1/4 red onion
3 stalks of green onion
4 stalks of celery
Half of a jalapeño (less or more depends on your preference)
1/4 red pepper
2 cups of shrimp
Sea salt
About 6 lemons


-Boil about 3 cups of water
-When water reaches boiling point, add shrimp and lower to medium/low heat and cook for 5 minutes
-While shrimp is cooking, chop up the veggies
-place chopped veggies in a large bowl
-Squeeze half of lemons over the veggies
-Add shrimp to the bowl and squeeze the other half over the shrimp
-Mix and add sea salt

*This is my version of ceviche because normally you would not cook the shrimp, it would get cooked by the lemon juice and you would have to let it sit for half an hour or so. However, I don’t like consuming raw fish/shellfish too much. Feel free to add boiled sweet potato.
